Put 100 g sugar into a saucepan with a tblsp of water and burn.
Apply the burnt sugar to the bottom and sides of 4 ramekin dishes.
Whisk the egg whites with the remaining sugar, add the hot milk, flavour with the vanilla.
Pour the cream into the ramekin dishes and cover with clingfoil.
Cook for 10 mins in the steaming bowl.
Leave to cool. Turn out onto a plate. Serve.
